Vegan Sausage Gravy (for Biscuits ‘n Gravy)

My favorite breakfast food is Biscuits ‘n Gravy. My mom used to make it on the weekends sometimes when I was a kid. There aren’t a lot of non-vegan food dishes that I have missed since giving up dairy…. but this is definitely one. However, I did realize (somewhere along the way) that I could make my own vegan version. And, while Biscuits ‘n Gravy alone is still good, adding sausage into the gravy really makes the dish.

We’ve been looking for a good vegan breakfast sausage in the grocery stores for a few months now; it’s hard to believe how difficult it was to find. I had almost given up hope and was going to try making my own when Glenn found this Vegan Sausage from Hilary’s, and for me it was perfect: made with just normal, natural foods such as lentils, dates, apples, and a few spices.

I just make a quick batch of homemade biscuits to go with the gravy, but you can also use ready-made, refrigerated biscuits also. My biscuit recipe makes about 6-7 biscuits, so I make a batch in the evening, and then refrigerate them so they will be ready for morning breakfasts during the week.

I’m the only one on the house who likes Biscuits ‘n Gravy, so I created this recipe for a small batch. However, it can easily be doubled or quadrupled if you need to serve 2 or 4 people instead.

The gravy is super quick to whip up, so I usually take a 10-12 min break in the morning, and while my sausage is browning in a skillet, I thicken up a batch of the gravy. Then I heat a couple of biscuits in the microwave for 30 seconds, and pour the hot gravy over top. 😋

Vegan Sausage Gravy (for Biscuits ‘n Gravy)

Ingredients
 
 

  • 2 Tablespoons All-Purpose Flour
  • 1 cup Almond Milk (or other non-dairy milk)
  • 1 Vegan Sausage Patty
  • 1 Tablespoon Oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions
 

  • Saute a vegan sausage until fully cooked and browned. Crumble into small pieces. Set aside.
  • Add oil to pan and stir in flour, salt, and pepper over medium-low heat. Stir continuously until the mixture is brown and creamy.
  • Slowly add the almond milk until the mixture is creamy; cook and stir until thickened.
  • Add in crumbled sausage.
  • Serve hot over biscuits.

Notes

  • You can make this in 1 pan as listed above in the directions.

  • To speed up the cook time, heat the sausage  in a small skillet at the same time you make the gravy in a separate pan. Vegan sausage usually takes 10-12 minutes to brown on the stovetop, and this is the same amount of time that it takes to make the gravy 😊 
 
  • This recipe can easily be doubled or quadrupled to make more servings.
