A hearty & delicious alternative to regular muffins. These muffins are made with fruit instead of refined sugar, and almond meal instead of all-purpose flour. The recipe is heavy on spices (lots of cinnamon, clove, and all-spice), and can be adjusted to personal taste. Cut back on the spice amounts listed in the recipe, if you don’t like your baked goods spicy. The Stevia can be left out or more added depending on how sweet you like your muffins. For me, the natural sweetness of the fruit is generally plenty (even without the Stevia), but if you are used to eating baked goods with refined sugar you may need to add more Stevia.

Low Carb No Sugar Apple Spice Muffins
Spicy muffins made with fruit and almond meal
Ingredients
- 1 tbsp Butter
- 1/2 Cup Applesauce (no sugar added)
- 2 Eggs
- 1 tsp Vanilla
- 2 tsp Cinnamon
- 1 tsp Allspice
- 1/2 tsp cloves
- 1/4 tsp salt
- 1 tsp Stevia
- 1 tsp Baking Powder
- 1 cup Almond Meal
- 1/3 cup raisins
- 1/3 cup Chopped Almonds
- 1/3 cup Unsweetened Carob Chips (optional)
Instructions
- In a medium sized bowl, melt butter in microwave.
- Mix in applesauce, vanilla and eggs into the melted butter; beat well by hand (about 30 seconds).
- Add cinnamon, allspice, cloves, salt, and Stevia; blend until combined.
- Then add baking powder and almond meal; mix well.
- Stir in raisins, chopped almonds and/or carob chips just until combined.
- Spoon batter into 6 muffin cups (it is okay to fill them all the way to the top as the muffins really don't rise much).
- Bake at 425 degrees for 15 minutes.
- Let cool and then store in an air-tight container.
