
I started making these vegetarian Black Bean “Meatballs” about 6 years ago. At the time there weren’t a lot meat-free meat options in the grocery stores, especially ones made without soy. Now there are a lot of different options, but they all seem so over-processed that I’m sure they are a healthy option. These black bean meatballs are super easy to make, and actually very yummy, too!

Black Bean “Meatballs”
Vegetarian Meatballs
Ingredients
- 15 oz can of black beans, drained and rinsed
- 1 egg
- 1 Tbsp fresh Italian parsley (or 1 tsp dried parsley)
- 1 tsp minced garlic
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup romano or parmesan cheese, grated
- ½ cup bread crumbs
Instructions
- Place all ingredients in a food processor and process until thoroughly mixed.
- Form into 1 1/2 – 2 inch balls.
- Place on a greased baking sheet, and bake in 350 degree oven for 15 minutes, turn balls over and bake for another 15 minutes, or until cooked through. (or they can be fried in a skillet in olive oil over medium heat until browned and cooked through).
- Serve with favorite pasta and red sauce recipe.
