
A few years ago, I was trying to find a no-sugar alternative Sweet Potato dish for Thanksgiving dinner, and found this in my recipe box. Normally, I just cut up sweet potatoes and bake them in the oven with a little olive oil, salt, and pepper…but I wanted to make something a little bit closer to the sweetened version that is typical at the holidays. It does have a little bit of honey for a sweetener, but I usually consider honey as an exception to my no-sugar rule.
Everyone loved this dish! Kayla, who doesn’t even like the traditional mashed sweet potatoes with brown sugar and marshmallows, said that these were great! Plus, these were even better leftover the next day!



Honey Roasted Sweet Potatoes
Ingredients
- 3 lbs sweeet potatoes or "yams"
- 3 Tbsp olive oil
- 3 Tbsp honey
- 1 ½ tsp lemon juice
- ¾ tsp salt
Instructions
- Preheat oven to 350 degrees
- Peel and cut the sweet potatoes into 1" pieces. Put them in a 9×13 baking dish
- In a small bowl, mix 3 T olive oil, 3 T honey, and 1 ½ tsp lemon juice
- Pour the mixture over the potatoes and toss to coat. Sprinkle with salt, and bake (stirring occasionally) for about 1 hour, or until potatoes are tender.
