Peel and cut the sweet potatoes into 1" pieces. Put them in a 9x13 baking dish
In a small bowl, mix 3 T olive oil, 3 T honey, and 1 ½ tsp lemon juice
Pour the mixture over the potatoes and toss to coat. Sprinkle with salt, and bake (stirring occasionally) for about 1 hour, or until potatoes are tender.
