
This is one of Glenn’s favorite chicken recipes. He likes it best with chicken thighs, but if I am eating it, too, I will use chicken breasts instead.
Enjoy with a side of rice, green vegetable, and the extra sauce from the bottom of the pan spooned over the top of the chicken…because this sauce is SOOOO good!

Sweet and Spicy Chicken
Ingredients
- 3-4 boneless skinless chicken thighs or breasts
- ¼ cup honey
- 1 Tbsp cider vinegar
- 1 Tbsp chili powder
- ½ Tbsp chopped garlic
- ¼ tsp paprika
- ½ tsp cumin
- ½ tsp cayenne pepper
- 1 tsp salt
Instructions
- Preheat oven to 400° F. Line a casserole dish (i.e. 11×7) with foil or parchment paper
- In a small bowl, combine ¼ cup honey, 1 Tbsp cider vinegar, 1 Tbsp chili powder, ½ Tbsp chopped garlic, ¼ tsp paprika, ½ tsp cumin, ½ tsp cayenne pepper, and 1 tsp salt.
- Place chicken pieces in the prepared casserole dish, and brush/pour the spiced honey mixture over the chicken.
- Bake the chicken for 35-40 minutes in 400 degree oven, occasionally basting the mixture from the bottom of the pan over the top of the chicken.
- Remove from oven, cover the dish with a clean towel, and allow chicken to rest 5 minutes
