
Cowboy cookies have turned into our favorite cookies. And they are also easy to adjust for allergies- depending on who I am making the cookies for, I leave out either the pecans or shredded coconut (or both), and they are still yummy! 😋
I originally made these for the wedding of my friend’s son a few years ago, but I had stopped making at home because they weren’t vegan. However, I realized could just adjust the recipe a little, and they would be vegan. Now they are the only chocolate chip cookie I make lately.
The original recipe called for 1 egg, but I usually just sub 1-2 Tablespoons of almond milk…however, you can also make a flax egg, if you prefer. I’ve made them both ways, and it works either way.

Vegan Cowboy Cookies
Ingredients
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- â…“ tsp Salt
- ½ cup Vegan butter substitute
- ¾ cup Brown Sugar
- 2 Tablespoon Almond Milk OR 1 Flax Egg
- 1 tsp Vanilla
- 1 cup Chocolate Chips (vegan)
- 1 cup Old Fashioned Rolled Oats
- â…” cup Coconut
- â…” cup Chopped Pecans
Instructions
- Mix all ingredients together
- Bake at 350° F on parchment paper lined baking sheets
- Large Cookies (1 ¼ cup batter)- bake for 7-9 min, turn pan and bake for 7-9 minutes longer
- Small Cookies- bake 13-16 minutes total

Can I use walnuts in place of the pecans? I want to make them and have everything but pecans! They look delicious!
Yes, I think walnuts would be a great substitution in place of the pecans.
