Preheat griddle or skillet on medium heat.
Mix 4 cups flour, 4 tsp baking powder, 3 tsp salt together in a large bowl. Blend in 4 T shortening or oil.
Add enough warm water to make a workable dough. You will probably need about 8-12 ounces for a full size batch. It’s really one of those things where you just need to gradually add the water, and judge it by the texture of the dough as you are mixing it. The dough should be soft, but not sticky. Add a little more flour to the dough if it is too sticky.
Turn the dough out onto a floured surface, and knead a few times until dough is soft and smooth.
Pinch off chunks of dough, and roll in your hand to make small balls. Dip into flour to keep it from sticking.
Transfer the dough to hot griddle; cook for about 15-30 seconds on one side, flip it over, and then cook on other side. (Note: before you flip it- lift up a corner and look underneath… it should have some brown spots…but not be black at all)
Makes about 12 tortillas. Enjoy plain, eat them with honey, or use them in your favorite recipes… I used mine to make Enchilada Style Burritos.
