Cucumber Salsa

Ingredients
  

  • 1 English Cucumber, diced
  • 2 Tomatoes, seeded and diced (about 1 cup diced)
  • 1 Jalapeno, seeded and diced
  • cup Red Onion, diced
  • 1 teaspoon Garlic, minced
  • 1 Tablespoon Chopped Fresh Cilantro
  • Tablespoons Lime Juice
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper
  • ¼ teaspoon Ground Cumin

Instructions
 

  • Combine all ingredients in a medium bowl; stir.
  • Store in an airtight container in the refrigerator for up to 3 days.

Notes

English cucumber seeds are smaller and the peel is thinner than a regular slicing cucumber, so I don't peel or deseed mine;  however, you can remove the seeds and peel from the cucumber, if you prefer.
