Cucumber Salad

Course Side Dish

Ingredients
  

  • ¼ cup Granulated Sugar
  • ½ cup Vinegar
  • ¾ cup Water
  • tsp Salt
  • ¼ tsp White Pepper
  • 1 English Cucumber (or 2 smaller regular cucumbers)

Instructions
 

  • Slice cucumber(s) very thin and place in a medium size bowl.
  • In a 2 cup measuring cup (or other dish), combine water, vinegar, water, salt, and white pepper.
  • Pour over cucumbers. Press cucumbers down to be sure they are underneath the liquid.
  • Cover bowl with plastic wrap or lid.
  • Refrigerate 1-2 hours or overnight (the longer the better!)

Notes

  • I use a Mandoline Slicer to slice my cucumbers to get them super thin.
  • I use either a 6 cup/1.4 ml bowl or 10 cup/ 2.3 ml bowl depending on how large my English cucumber is.
